Ingredients

    • 12 oz spaghetti
    • 2 tbsp olive oil
    • 4 cloves garlic, minced
    • 1/2 tsp red pepper flakes
    • 1 can (14 oz) diced tomatoes
    • 1/2 cup kalamata olives, pitted and sliced
    • 2 tbsp capers, drained
    • 1 can (15 oz) red beans, drained and rinsed
    • 4 cups fresh spinach, roughly chopped
    • 1/4 cup fresh parsley, chopped
    • 1/4 cup vegan Parmesan cheese (optional)
    • Salt and pepper to taste

Instructions

  1. Cook the Spaghetti:
    Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.
  2. Prepare the Sauce:
    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1-2 minutes until fragrant.
