Instructions

Step 1: Prepare the Aubergine

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Score the flesh of each aubergine half in a crisscross pattern, being careful not to cut through the skin.
  3. Brush the cut sides of the aubergines with olive oil and season with salt and black pepper. Place them cut-side up on the baking sheet.
