  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 2 tbsp harissa paste (adjust to taste)
  • 1 tbsp maple syrup or agave syrup
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • Salt and black pepper to taste

For Garnish:

  • 1 tbsp toasted pine nuts or slivered almonds (optional)
  • Fresh parsley or cilantro, chopped

Optional Sides:

  • Steamed couscous, rice, or quinoa
  • Flatbread or pita

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 400°F (200°C). Line a large baking tray with parchment paper.

Step 2: Prepare the Harissa Glaze

  1. In a small bowl, mix the harissa paste, olive oil, maple syrup, smoked paprika, ground cumin, ground coriander, salt, and pepper. Adjust the harissa amount based on your spice preference.

Step 3: Toss the Vegetables and Chickpeas

  1. In a large mixing bowl, toss the aubergine cubes, chickpeas, red onion wedges, and cherry tomatoes with the harissa glaze. Ensure everything is evenly coated.

Step 4: Roast the Tray Bake

  1. Spread the mixture evenly on the prepared baking tray.
  2. Roast in the oven for 35–40 minutes, stirring halfway through, until the aubergine is tender, chickpeas are slightly crispy, and the vegetables are caramelized.

Step 5: Garnish and Serve

  1. Remove the tray from the oven and let it cool slightly. Sprinkle with toasted pine nuts or slivered almonds, and garnish with fresh parsley or cilantro.
  2. Serve warm with a side of couscous, rice, or flatbread, and a wedge of lemon for added zest.

Tips & Variations

  • Extra veggies: Add zucchini, bell peppers, or sweet potatoes for more variety.
  • For a creamier finish: Drizzle with tahini or a dollop of vegan yogurt before serving.
  • Low spice: Use a milder harissa or cut the harissa paste with additional olive oil.
  • Protein boost: Add some tofu or vegan sausage slices for extra heartiness.
