Hummus flatbread pizzas with roasted vegetables.

These hummus flatbread pizzas with roasted vegetables are a delicious and healthy twist on traditional pizza. Ingredients:
– 1 can of chickpeas, drained and rinsed
– 2 cloves of garlic, minced
– 2 tablespoons of tahini
– Juice of 1 lemon
– 2 tablespoons of olive oil
– Salt and pepper to taste
– 4 whole wheat flatbreads
– 1 zucchini, sliced
– 1 red bell pepper, sliced
– 1 red onion, sliced
– 1 cup of cherry tomatoes, halved
– 1/2 cup of crumbled feta cheese
– Fresh basil leaves, chopped

Prep time: 15 minutes
Cook time: 20 minutes

Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a food processor, combine the chickpeas, garlic, tahini, lemon juice, olive oil, salt, and pepper. Blend until smooth to make the hummus.
3. Place the flatbreads on a baking sheet and spread a layer of hummus on each one.
4. Top the flatbreads with the sliced zucchini, red bell pepper, red onion, and cherry tomatoes.
5. Bake in the preheated oven for about 15-20 minutes, until the vegetables are roasted and the flatbreads are crispy.
6. Remove from the oven and sprinkle with crumbled feta cheese and chopped basil leaves.
