Ingredients:

  • 1 cup dried lentils (green or brown), rinsed

  • 1 egg (or flax egg for a vegan option: 1 tbsp flaxseed meal + 3 tbsp water)
  • Olive oil, for frying

Instructions:

  1. Cook the Lentils:
    • In a medium saucepan, combine the lentils and water or vegetable broth. Bring to a boil, then reduce the heat and simmer for about 20-25 minutes until the lentils are tender and most of the liquid is absorbed.
    • Drain any excess liquid and let the lentils cool slightly.
  2. Prepare the Pattie Mixture:
    • In a large bowl, combine the cooked lentils, chopped onion, minced garlic, grated carrot, breadcrumbs (or oats), parsley, cumin, smoked paprika, coriander, salt, and pepper.
    • Add the egg (or flax egg) and mix everything together until the mixture holds together. If it’s too wet, add more breadcrumbs or oats; if it’s too dry, add a little water or broth.
  3. Shape the Patties:
    • Using your hands, form the mixture into small patties (about 2-3 inches in diameter).
  4. Fry the Patties:
    • Heat olive oil in a large skillet over medium heat.
    • Fry the patties for about 4-5 minutes on each side, until they are golden brown and crispy on the outside.
    • Transfer to a plate lined with paper towels to drain excess oil.
  5. Serve:
    • Serve the lentil patties hot, with your favorite dipping sauce, in a sandwich, or over a salad.
