This delicious quiche combines a flaky, homemade crust with a rich, savory filling, enhanced by a spicy, tangy sauce for an extra layer of flavor.

Ingredients:

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 tsp salt
  • 3-4 tbsp cold water

For the Filling:

  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil, chopped
  • 1 cup grated Parmesan cheese
  • 3 large eggs
  • 1 cup heavy cream or milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder (optional)
  • 1/2 cup Irresistible Vegan Spicy Tomato Turmeric Slather Sauce (adjust to taste)

For Roasting Tomatoes:

  • Olive oil for drizzling

Instructions:

  1. Prepare the Crust:
    • Mix flour and salt in a bowl. Add cold butter and blend until the mixture resembles coarse crumbs. Gradually add cold water until the dough forms. Shape into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  2. Roast the Tomatoes:
    • Preheat the oven to 375°F (190°C). Arrange cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 15-20 minutes until soft and caramelized. Set aside.
  3. Blind Bake the Crust:
    • Roll out the chilled dough and transfer to a 9-inch pie dish or quiche pan. Trim excess and prick the bottom with a fork. Cover with parchment paper, fill with pie weights or beans, and bake for 10-12 minutes. Remove the weights and parchment, bake for an additional 5 minutes.
  4. Prepare the Filling:
    • In a bowl, whisk together eggs, cream, salt, pepper, garlic powder, and Irresistible Vegan Spicy Tomato Turmeric Slather Sauce. Stir in basil and Parmesan.
  5. Assemble the Quiche:
    • Arrange roasted tomatoes on the pre-baked crust. Pour the egg mixture over the tomatoes and basil. Sprinkle extra Parmesan if desired.
  6. Bake the Quiche:
    • Bake at 375°F for 30-35 minutes, or until the filling is set and golden. Allow to cool slightly before slicing.
  7. Serve:
    • Garnish with fresh basil and serve warm or at room temperature. Pair with a green salad for a complete meal.

Chef’s Tips:

  • Adjust Spice: For a milder flavor, use less Spicy Tomato Turmeric Slather Sauce.
  • Add-ins: Spinach, mushrooms, or onions make great additions.
  • Cheese Options: Try Gruyère or mozzarella for a different taste.

Enjoy this roasted tomato, basil, and Parmesan quiche with a spicy twist for any meal!
