Ingredients:
- 4 medium zucchinis
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 cup cherry tomatoes, diced
- 1/2 cup breadcrumbs (or panko for extra crunch)
- 1/2 cup grated Parmesan cheese (or vegan cheese for a dairy-free option)
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Salt and pepper, to taste
- Fresh parsley, for garnish
- Optional: 1/2 cup cooked quinoa, rice, or ground meat for added filling
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare the Zucchinis:
- Slice the zucchinis in half lengthwise and scoop out the flesh using a spoon, leaving about 1/4 inch of the zucchini shell. Set the scooped-out zucchini flesh aside.
- Place the hollowed-out zucchinis (zucchini boats) on the prepared baking sheet.
- Make the Filling:
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
- Chop the reserved zucchini flesh and add it to the skillet along with the diced cherry tomatoes. Cook for an additional 5-6 minutes until the vegetables soften and the liquid reduces.
- Stir in the breadcrumbs, Parmesan cheese, oregano, basil, salt, and pepper. If using cooked quinoa, rice, or ground meat, stir it into the mixture as well.
- Fill the Zucchini Boats:
- Spoon the prepared filling into the hollowed zucchini boats, pressing the mixture down lightly.
- Sprinkle extra breadcrumbs and Parmesan on top for added crunch and flavor.
- Bake the Zucchini Boats:
- Bake in the preheated oven for 20-25 minutes or until the zucchinis are tender and the topping is golden brown and crispy.
- Garnish and Serve:
- Remove from the oven and garnish with fresh parsley before serving.
- Serve the zucchini boats warm with a side salad or roasted vegetables.
Chef’s Tips:
- Customizable: You can easily customize the filling by adding your favorite grains or proteins, such as cooked lentils, tofu, or ground turkey.
- Dairy-Free Option: Use nutritional yeast in place of Parmesan for a dairy-free version.
- Extra Flavor: Add a sprinkle of red pepper flakes for a touch of heat.
Enjoy these delicious and healthy zucchini boats, perfect for a light lunch or dinner!
