Ingredients:

  • 4 medium zucchinis
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup cherry tomatoes, diced
  • 1/2 cup breadcrumbs (or panko for extra crunch)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare the Zucchinis:
    • Slice the zucchinis in half lengthwise and scoop out the flesh using a spoon, leaving about 1/4 inch of the zucchini shell. Set the scooped-out zucchini flesh aside.
    • Place the hollowed-out zucchinis (zucchini boats) on the prepared baking sheet.
  3. Make the Filling:
    • Heat the olive oil in a skillet over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
    • Chop the reserved zucchini flesh and add it to the skillet along with the diced cherry tomatoes. Cook for an additional 5-6 minutes until the vegetables soften and the liquid reduces.
    • Stir in the breadcrumbs, Parmesan cheese, oregano, basil, salt, and pepper. If using cooked quinoa, rice, or ground meat, stir it into the mixture as well.
  4. Fill the Zucchini Boats:
    • Spoon the prepared filling into the hollowed zucchini boats, pressing the mixture down lightly.
    • Sprinkle extra breadcrumbs and Parmesan on top for added crunch and flavor.
  5. Bake the Zucchini Boats:
    • Bake in the preheated oven for 20-25 minutes or until the zucchinis are tender and the topping is golden brown and crispy.
  6. Garnish and Serve:
    • Remove from the oven and garnish with fresh parsley before serving.
    • Serve the zucchini boats warm with a side salad or roasted vegetables.
