- 3-4 tbsp cold water
For the Filling:
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil, chopped
- 1 cup grated Parmesan cheese
- 3 large eggs
- 1 cup heavy cream or milk
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder (optional)
- 1/2 cup Irresistible Vegan Spicy Tomato Turmeric Slather Sauce (adjust to taste)
For Roasting Tomatoes:
- Olive oil for drizzling
Instructions:
- Prepare the Crust:
- Mix flour and salt in a bowl. Add cold butter and blend until the mixture resembles coarse crumbs. Gradually add cold water until the dough forms. Shape into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- Roast the Tomatoes:
- Preheat the oven to 375°F (190°C). Arrange cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 15-20 minutes until soft and caramelized. Set aside.
- Blind Bake the Crust:
- Roll out the chilled dough and transfer to a 9-inch pie dish or quiche pan. Trim excess and prick the bottom with a fork. Cover with parchment paper, fill with pie weights or beans, and bake for 10-12 minutes. Remove the weights and parchment, bake for an additional 5 minutes.
- Prepare the Filling:
- In a bowl, whisk together eggs, cream, salt, pepper, garlic powder, and Irresistible Vegan Spicy Tomato Turmeric Slather Sauce. Stir in basil and Parmesan.
- Assemble the Quiche:
- Arrange roasted tomatoes on the pre-baked crust. Pour the egg mixture over the tomatoes and basil. Sprinkle extra Parmesan if desired.
- Bake the Quiche:
- Bake at 375°F for 30-35 minutes, or until the filling is set and golden. Allow to cool slightly before slicing.
- Serve:
- Garnish with fresh basil and serve warm or at room temperature. Pair with a green salad for a complete meal.
Chef’s Tips:
- Adjust Spice: For a milder flavor, use less Spicy Tomato Turmeric Slather Sauce.
