    • 1 tsp smoked paprika
    • 1 tsp cumin
    • 1/2 tsp garlic powder
    • 1/2 tsp chili powder
    • Salt and pepper, to taste
  • For Serving:
    • 8 small flour or corn tortillas
    • 1 avocado, sliced
    • 1/4 cup fresh cilantro, chopped
    • Lime wedges
    • Sour cream or vegan sour cream (optional)
    • Salsa or pico de gallo (optional)

Instructions:

  1. Prepare the Vegetables:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the sliced onions and bell peppers to the skillet and sauté for 3-4 minutes until they start to soften.
    • Add the zucchini and mushrooms, and continue to sauté for another 5-6 minutes until all vegetables are cooked through but still slightly crisp.
  2. Season the Vegetables:
    • Sprinkle the smoked paprika, cumin, garlic powder, chili powder, salt, and pepper over the vegetables.
    • Stir well to coat the vegetables evenly with the spices and cook for another 2 minutes until the spices are fragrant.
  3. Warm the Tortillas:
    • While the veggies are cooking, warm the tortillas in a dry skillet or over an open flame until they’re lightly charred and pliable.
  4. Assemble the Fajitas:
    • Place the cooked vegetables in the center of each tortilla.
    • Top with avocado slices, fresh cilantro, and a squeeze of lime juice.
    • Add optional toppings like sour cream, salsa, or pico de gallo for extra flavor.
  5. Serve:
    • Serve immediately with lime wedges on the side for squeezing.

Chef’s Tips:

  • Add Protein: For added protein, feel free to add black beans or grilled tofu to the vegetable mix.
  • Extra Flavor: Marinate the vegetables in a mix of lime juice, garlic, and cumin before cooking for an extra burst of flavor.
  • Variations: You can add other vegetables like squash, eggplant, or even roasted corn for variety.

Enjoy these vibrant, flavorful, and healthy veggie fajitas—perfect for a quick and satisfying meal!
