Ingredients:

  • 2 medium zucchinis, grated

Instructions:

  1. Prepare the Zucchini:
    • Grate the zucchinis and place them in a colander. Sprinkle with a little salt and let them sit for 10 minutes to release excess moisture.
    • After 10 minutes, use a clean kitchen towel or paper towels to squeeze out as much moisture from the zucchini as possible. This step ensures crispy fritters.
  2. Make the Fritter Batter:
    • In a large bowl, combine the grated zucchini, chopped onion, minced garlic, flour, grated Parmesan (if using), beaten eggs, parsley or dill, baking powder, paprika, salt, and pepper. Mix everything well until a batter forms.
  3. Form the Fritters:
    • Heat olive oil in a large skillet over medium heat.
    • Scoop about 2 tablespoons of the zucchini mixture and drop it into the hot oil, flattening slightly with the back of a spoon to form a fritter. Repeat with the remaining batter, making sure not to overcrowd the pan.
  4. Fry the Fritters:
    • Cook the fritters for 3-4 minutes on each side, or until they are golden brown and crispy. Transfer them to a plate lined with paper towels to drain any excess oil.
  5. Serve:
